Cacao liquor
Cacao liquor is made by pressing the whole cacao bean and heating it at very low temperatures until it forms a paste. This is the stage before it separates into cacao butter and cacao powder; this is the whole, unrefined raw bean.
Cacao liquor makes an extraordinarily rich chocolate product because you don't have to add a lot of extra fats to it as you would if you were making raw chocolate with cacao nibs or cacao powder. For an intense chocolate experience, just gently melt your cacao liquor and add your sweeteners of choice, to taste - and a healthy dose of superfoods, naturally.
Cacao is celebrated as "the food of the gods." It is one of the most nutritious foods known to man. It has the highest known antioxidant levels of any food, as well as a wide array of beneficial minerals, notably sulphur and magnesium. And of course it is widely recognised for its mood boosting properties, containing naturally occuring chemicals which stimulate the happy centres in our brain chemistry - substances like anandamide and phenylethylamine. No other food in the world is known to contain as many mood-improving substances as cacao.
When we eat cacao in its raw form, combined with low-glycaemic sweeteners and healthy fats, we are ensuring a huge dose of beneficial nutrition - food for our bodies and our hearts.
